Coffee Biscuits ...so yummy!

2kg Cake Flour

7ml Salt

500g Brown Sugar

750g Butter

100g Cooking Fat

400ml Golden syrup

25ml Bicarbonate of Soda

250ml Strong Black Coffee

12,5ml Vanilla Essence

Method:

Sift flour and salt into a mixing bowl.

Add brown sugar and mix well.

Add Butter and cooking fat to the dry ingredients and mix well.

Add syrup and mix.

Mix the bicarb and coffee together and then add to the mix.

Lastly, add in the vanilla essence and mix well.

Put the mixture into a plastic bag and leave overnight.

The next day, roll out with rolling pin and cut into strips. Score with a fork.

Place biscuits on a baking sheet slightly apart and bake at 200° for 10-12 mins.

Makes approximately 24 biscuits.
